Separate ladyfinger halves into groups of
three. Spread cut surface of 4 groups with a layer of peanut butter and
preserves. Place remaining ladyfinger halves on top, sandwich style; set
aside.Beat egg substitute, milk,
vanilla and cinnamon with fork until blended. Pour into shallow pan (8”
square baking pan works well); place sandwiches in egg mixture. Allow to
absorb about half the mixture; turn sandwiches over, using pancake turner
and allow to absorb remaining liquid.
Spray non-stick griddle or skillet with
cooking spray; place over medium heat (300°
on electric skillet). Use pancake turner to transfer sandwiches to
skillet. Cook until brown on both sides. Serve for breakfast, lunch or
dessert with a drizzle of maple syrup.
Note: Can be reheated in the microwave
on high (100%) for 10 to 20 seconds.
